Strawberry popsicles are pink, pretty, and wonderfully sweet. They’re ideal for a hot summer’s day, and even as a sweet treat during the winter.

Making popsicles at home allows you to adjust the recipe however you like. But if you want something simple, you can’t beat these recipes.

Strawberry popsicles are best made with fresh fruit, as they’re the sweetest when they’re ripe. But frozen berries will work just as well if that’s all you have. It’s best to add some citrus to the mix, to brighten the flavors, along with a little sugar or honey for sweetness.

Oh, and the great things about these recipes is that you can use any flavor you want! If you feel like making the tart with raspberries or bright with mangoes, go right ahead!

Best Ever Strawberry Popsicles

You could make strawberry popsicles with just berries and honey, but if you really want to boost the flavor, this is the one to try.

Loaded with jam for sweetness and freeze-dried strawberries for a real kick, these are about as good as it gets.

How To Make Strawberry Popsicles

This recipe will make 6 standard ice pops.

Ingredients

  • 425 grams of washed, fresh Strawberries (15 ounces) 

  • 85 grams White Sugar (3 ounces)

  • 5 grams Freeze-Dried Strawberry Powder (1 tablespoon) 

  • 1 teaspoon of Lemon or Lime Juice 

  • 1/8 teaspoon Salt

  • 85 grams of Strawberry Jam (3 ounces)

Method

  1. Add the fresh strawberries, freeze-dried strawberries, lemon/lime juice, sugar, and salt to a blender. 
  2. Blend until smooth.
  3. Add the jam and gently mix, leaving streaks in the mix. 
  4. Pour the popsicle mix into molds and freeze until solid. About four hours.

Creamy Strawberry Popsicles

I love creamy popsicles. They’re bright and fresh with a lovely added lusciousness that fruity popsicles don’t have.

Plus, they have a wonderful boost of protein, thanks to the Greek yogurt. It makes them incredibly thick and creamy - much more so than regular yogurt.

I suggest using full-fat yogurt, but if you want these lighter, go ahead and use the fat-free kind.

How To Make Creamy Strawberry Popsicles

This recipe will make 6 standard ice pops.

Ingredients

  • 12 ounces of plain Greek yogurt
  • 2 cups of diced fresh Strawberries
  • 1/4 cup Honey or Maple Syrup
  • 2 tablespoons freshly squeezed Lemon or Lime Juice
  • 1 teaspoon Vanilla Paste

Method

  1. Dice the strawberries and add them to a blender with Greek yogurt, honey, lemon juice, and vanilla.
  2. Blend until smooth, then scrape the sides down. Blend again.
  3. Pour the popsicle mixture into the molds and add the popsicle sticks. 
  4. Freeze until solid. About four hours. 

Vegan Strawberry Popsicles

Popsicles are some of the easiest recipes to make vegan. After all, all you need to do is blend fruit with coconut cream, then freeze.

How easy is that?

I think these are great when they’re fully blended, but I also like them with chunks of fresh strawberry in the mix.

If you use fresh fruit, chances are these will be sweet enough - especially with the coconut milk too. But I suggest you try the mix before freezing. If it needs a little extra flavor, add honey, or agave, or simple syrup.

Of course, if you want these totally vegan, you’ll need to skip the honey.

How To Make Vegan Strawberry Popsicles

This recipe will make 8 standard ice pops.

Ingredients

  • 1 14-ounce can of Coconut Cream
  • 300 grams fresh Strawberries (2.5 cups)
  • 2 tablespoons Honey

Method

  1. If you want these smooth, just add the strawberries to the blender whole.
  2. If you want these with pops of fruit, chop the strawberries and hold 100 grams back.
  3. Add the rest of the strawberries to a blender with the honey/syrup and coconut cream.
  4. Blend until smooth.
  5. Pour the mixture into popsicle molds.
  6. Add the reserved strawberry chunks - if using. Push them into the mold with a spoon or popsicle stick.
  7. Add popsicle sticks and freeze until set. About four hours.
