The Best Pumpkin Spice Syrup Recipe

Not only is this incredible pumpkin spice syrup way better than anything from the store - but it’s got real pumpkin in it!

That’s right. No fake pumpkin flavors here - this stuff is legit!

And if you’ve never made your own coffee syrup before, I think you’ll be surprised at just how easy it is.

Ready in just 15 minutes, it can be made with sugar or a sugar substitute, depending on your preferences.

Either way, it’s sweet, warm, and just what you need for when the weather cools down.

Ingredients:

  • Pumpkin Puree - be sure to get pumpkin puree, not pumpkin pie filling. The latter is already spiced, which will be overwhelming when you add the additional spices below.
  • White Sugar - for sweetness
  • Brown Sugar - for its caramelly goodness
  • Vanilla Paste -  for sweet warmth
  • Water - for the base
  • Cinnamon, Nutmeg, Cloves, and Ground Ginger -  this mix makes the pumpkin pie spice.

How to Make Pumpkin Spice Syrup:

  1. Add all of the ingredients to a tall, heavy-bottomed saucepan.
  2. Turn the heat to medium-high and bring the mixture to a boil, stirring continuously.
  3. Once the mix is at a rolling boil, turn the pan down to medium and simmer, stirring every few minutes to keep the bottom from burning.
  4. Cook the syrup for 10-15 minutes until the sugar is dissolved and the consistency looks like maple syrup.
  5. Remove the pan from the heat and allow the syrup to cool for 5 minutes.
  6. Strain the syrup into a heat-proof container and leave to cool completely before covering and placing it in the fridge. 

Note: the syrup will thicken in the fridge but will smooth out when you add it to your hot latte!

Ways to Use Pumpkin Spice Coffee Syrup

The most obvious way to use this pumpkin spice syrup is in coffee. It’ll make a wonderful pumpkin spice latte. And since it’s liquid, you can even use it to sweeten iced coffee.

But that’s not all it’s good for! Check out these ideas for uses for pumpkin spice syrup:

  • Pumpkin Spice Pancakes - Stir 1-2 tablespoons of pumpkin spice syrup into your pancake batter. Cook as normal, then top with an extra drizzle.

  • Pumpkin Spice Iced Tea - Add a splash of pumpkin spice syrup to your next batch of iced tea for a fun, seasonal twist. Black or chai tea work best.

  • Pumpkin Spice Ice Cream Sundae - The next time you make a bowl of ice cream, try drizzling over some pumpkin spice syrup and then topping it with chopped nuts. 

  • Pumpkin Spice Milkshake - I already have a terrific recipe for a pumpkin milkshake. But you can totally add this syrup to the recipe instead of ground spices.

  • Pumpkin Spice Granola and Yogurt - Add some granola, a bit of milk, and a dollop of yogurt to a bowl. Then drizzle over the pumpkin spice syrup. Easy peasy.

  • Pumpkin Spice Hot Chocolate - Add 1-2 tablespoons of pumpkin spice syrup to a mug of hot chocolate for a warming, autumnal drink. Top with whipped cream and a sprinkle of cocoa powder.

  • Pumpkin Spiced Baked Apples - Wash and core 4 apples, then nestle them into a buttered casserole dish. Top with a mix of cinnamon and brown sugar, a drizzle of pumpkin syrup, and a few chopped nuts. Then, bake until sticky and steaming. 

  • Pumpkin Spice Cocktails - Simple syrup (water and sugar) is the best way to add sweetness to cocktails because it blends well and doesn’t leave a grainy finish. So why not make it spiced and add pumpkin instead? It goes fabulously with bourbon or rum-based drinks.

  • 80 grams of Pumpkin Puree (about 1/3 cup)
  • 100 grams of White Sugar* (1/2 cup)
  • 100 grams of Brown Sugar (1/2 cup)
  • 1/2 teaspoon of Vanilla Paste
  • 300 ml of Water (about 1 1/4 cups)
  • 1 teaspoon of Cinnamon
