Sugar-Free Coffee Syrup

Sugar syrup, or simple syrup, is ideal for making coffee - especially iced coffee because regular granulated syrup doesn’t dissolve in iced coffee.

So, if you like iced lattes and cold brew, this sugar free coffee syrup recipe is for you.

That said, it’s also ideal for cocktails! Make it as is, keep it in the fridge, and add it everything from your favorite mojito to these gorgeous Empress Gin cocktails.

Ingredients:

This recipe uses Xylitol rather than Erythritol because the latter will crystalize when it cools.

Of course, if you’re making a small batch to use right away, use any kind of sweetener you like. But if you want a bigger batch to keep on hand, make sure to use Xylitol.

Here’s the base of the recipe:

  • Xylitol
  • Vanilla Paste
  • Xanthan Gum
  • Water

How To Make the Best Vanilla Sugar-Free Coffee Syrup:

  1. Add the sweetener to a small to medium sized saucepan with the vanilla, Xanthan gum, and water. 
  2. Bring to a low boil and simmer for 2-3 minutes, stirring with a spatula until it thickens. 
  3. Leave to cool and then store in a glass bottle or jar.

Sugar Free Simple Syrup Variations

As promised, I have 9 more flavors for you to try. Some are ideal for coffees, where others will work best in cocktails.

But no matter which one you choose, I know you’ll love it.

1. Salted Caramel - Add 1 tablespoon of Sugar-Free Caramel extract plus 1/2 a teaspoon of sea salt. This would be great in my Tiramisu Martini!

2. Cinnamon - Add 2-3 cinnamon sticks to the pot and simmer to infuse the flavor. If you like a deeper flavor, leave them in the syrup in the storage jar.

3. Mint - Add a handful of fresh mint leaves to the pot and simmer. Leave them in the syrup until it’s cooled, then strain them out. Use it in Mojitos or Mint Juleps!

4. Lemon - Carefully peel the skin off 1 large or 2 small lemons, being sure not to get any of the white underneath. Add the peel to the pot and simmer to infuse the syrup with a citrussy twist.

5. Ginger - Peel and cut a handful of fresh ginger, and add it to the syrup as it boils. Steep until cold, then strain away. This would work really well in coffee, tea, and cocktails.

6. Berry - Pick one or use a mix of fresh berries - raspberries, strawberries, blueberries, etc. - add them to the syrup as it boils. Strain out the berries when the syrup is cool and use it to make tasty cocktails or sweet lemonade.

7. Chai Spiced - Add 2-3 chai tea bags into the syrup and let them steep as the syrup cools.

8. Lavender - This one is a tough one to make because some people like a lot, and others can only stand a little. So, start with 1 tablespoon of dried culinary lavender in the simmering syrup. Remove and taste a small amount when it’s cool, then add more as needed.

9. Rosemary - For cocktails, add a few sprigs of fresh rosemary to the syrup after boiling. Leave it in the pot as it cools, then strain it away. This works so well in cocktails with gin.

10. Chili-Lime - Carefully peel 1 lime (without the white) and add it to the pot with 1 small, sliced chili (halved and deseeded). Let the mixture cool, then strain the lime and chili away. Try this in a spicy margarita!
